Tomato sauce with pork ribs

Serve with pasta and Chicken or Veal parmesan.
After about 4 hrs, and tomato have been purreed.

Add bones and herbs cook on low heat for 5 hours, slow cooking and stir occasionally. Like in Goodfellas when he (Ray Liotta) talked about stirring the sauce; its true you need to do it to prevent burning.

Saute garlic first, add onion when garlic starts to golden. Deglaze with red wine; Pinot Noir is nice.

Ingredients: onion, garlic, tomato whole -peeled, basil, black pepper, olive oil, oregano, red wine
Sear all sides till brown, and then remove and set aside.
Start and season with some pork ribs with bone for a great flavor to your tomato sauce.

Chicken Parmesan

True comfort food. One of my favorites and easy to make.


Bake at 400 for 10 minutes, or till cheese is melted.
I like to use panko bread crumbs with tenderized chicken breast.

Seafood feast

Grilled marinated shrimp skewers, stuffed sockeye salmon with jumbo lump crab, swordfish, summer vegetables, and quinoa salad.

BARBEQUE CHICKEN

"Oh yeah baby!!!! Life is good."


I just take legs and thighs, simmer than in a seasoned stock with onions, carrots, tomatoes, celery, fresh rosemary, salt, and pepper...or just a simple liquid is fine. Low simmer for a couple of hours or until chicken is fully cooked. Then remove from stock, add bbq sauce and grill.

BABY BACK RIBS




Slow cooked Baby Back Ribs with a New Mexican Rub. I slow cooked it for about 4 1/2 hrs on as at about 225. I used some smoked paprika, dried Chiles from New Mexico, garlic, onion, brown sugar, and kosher salt.

Buitoni "Wild Mushroom Raviolis"

I sauteed garlic, onion, tomato, and broccoli rabe in olive oil and finished it with some white wine, fresh lemon, and parmesan.

Grilled Marinated Skirt Steak Burrito with peppers, onion, and shredded cheese

Great night to grill out after several rainy days here in Maryland. Kristy bought a skirt steak, an inexpensive cut that is very versatile, which I marinated with worchestire, olive oil, smoked paprika, black pepper, kosher salt, and Tastefully Simple grill seasoning.

Topped with shredded Monterey Jack and Cheddar and served with a side of quinoa.


Juicy and tender!

About 6 minutes on each side.
