Chicken Parmesan

True comfort food. One of my favorites and easy to make.


Bake at 400 for 10 minutes, or till cheese is melted.
I like to use panko bread crumbs with tenderized chicken breast.

Grilled marinated Atlantic Swordfish






Marinate for about an hour


Olive oil, basil, olives, red onion, lemon juice, tomato, and garlic.

BARBEQUE CHICKEN

"Oh yeah baby!!!! Life is good."


I just take legs and thighs, simmer than in a seasoned stock with onions, carrots, tomatoes, celery, fresh rosemary, salt, and pepper...or just a simple liquid is fine. Low simmer for a couple of hours or until chicken is fully cooked. Then remove from stock, add bbq sauce and grill.

BABY BACK RIBS




Slow cooked Baby Back Ribs with a New Mexican Rub. I slow cooked it for about 4 1/2 hrs on as at about 225. I used some smoked paprika, dried Chiles from New Mexico, garlic, onion, brown sugar, and kosher salt.

Grilled Marinated Skirt Steak Burrito with peppers, onion, and shredded cheese

Great night to grill out after several rainy days here in Maryland. Kristy bought a skirt steak, an inexpensive cut that is very versatile, which I marinated with worchestire, olive oil, smoked paprika, black pepper, kosher salt, and Tastefully Simple grill seasoning.

Topped with shredded Monterey Jack and Cheddar and served with a side of quinoa.


Juicy and tender!

I got a nice sear on it to lock in all the natural juces.





About 6 minutes on each side.










Smells good!

Chicken Pot Pie




Hello, I am Kristy, Frank's wife and new blogger. I am no chef but last night I made a chicken pot pie with a recipe given to me by a good friend who raves about it! It is not low fat but it was delicious and simple to make. Let me know if you enjoy it!



You'll need:
1 lb. cooked chicken breasts

1 box of pie crusts (2 crusts)

1 can cream of chicken soup

1 cup of cheddar cheese

2 cups of vegetables (I used brocc and carrots)

2/3 cup of milk

salt and pepper to taste




Preheat oven to 400 degrees.




Mix all ingredients together in a bowl. Unroll pie crust and lay into 9" pie plate. Place mixture on top.


Unroll 2nd pie crust and lay on top of mixture. Crimp edges of crust to seal off.



Cut a small hole in the center of pie or cut a few small slits on top. Bake for 30 minutes or until golden brown.


It was plenty for us to enjoy for dinner the next night too! I think next time I will use some mushrooms! Let me know what you put in your pot pie!

Shrimp and vegetable stirfry

Recently I bought a new wok online at Amazon, the infinite circulon edition, for about $35. It was a great deal. This pan is dishwasher safe, so they say. We made a stirfry the other night with shrimp and vegetables. The new pan was great and look forward to use it more. If you are looking for new pans, I reccomend these for the house. We also served it with some Quinoa which our new favorite side.

Marinated wings the big game



I love wings, probally next to pizza, just ask my wife. It is comfort food for my soul. Marinating is one of my favorite things to do with different types of meats, spices, sauces, BBQs, etc. I do find fried wings to be overrated, and actually enjoy them to be baked, grilled, or even seared in a pan, deglazed and finished in the oven with some added liquid for a nice natural stock. Grilling, on low heat, is a great method.

Kristy made a great dinner this week with Buffalo chicken sausage. Not too spicy and very good with the pasta. She went to Trader Joes and bought some great stuff to try out.
