Mexican Lasagna with Black bean sauce and Fresh Salsa

  2. BLACK BEAN SAUCE:
    1 CAN BLACK BEANS
    1 RED ONION
    1 GARLIC CLOVE
    1 CUP CHX STOCK
    Tbsp CUMIN
    S/P TO TASTE
    1 Tbsp SMOKED PAPRIKA
    Simmer for 20 minutes, and blend for till sauce consistency.

    FOR LASAGNA:
    Flour tortilla
    Enchilada sauce
    Shredded cheddar
    Ground beef or turkey

    Cook beef, add enchilada sauce.
    All about layering, similar to making a lasagna.... tortilla, beef, cheese, tortilla, beef, cheese.
    Add fresh salsa on top and sour cream.

    Bake for 30 minutes @ 400.
